My Kids Don’t Know It’s A Veggie And I Prefer It Better Than Real Rice!

The Cauliflower Keto Rice is my fave side dish at the moment, that goes with every protein source – beef, chicken, fish, pork, or lamb, it is super versatile, much like real rice but without the crabs and bloat. No matter what time of year it is, you could always benefit from a light dinner that is healthy, easy to digest, and low carb.

After a big letdown with steamed cauliflower rice, I wasn’t too confident that this recipe would actually be a winner. But you know what, adding just 3 ingredients transcend this cauliflower keto rice into a massive game-changer. My kids love it, I love it and it’s actually healthy!

Our Fried Cauliflower Keto Rice Recipe | Let’s Get Cooking!

This simple recipe really is surprisingly great and only takes 10 to 15 minutes. We all have experienced the funky smell that cooked cauliflower normally emits in our kitchens, but trust me, this keto rice recipe is truly something different (and smells good).

I usually cook a whole cauliflower head which is enough for our whole family (2 adults & 2 kids) for two nights. Half or double the quantities so it suits you and your fam 🙂

Ingredients

  • 1 Cauliflower
  • 2 tbs Butter
  • 2 tbs Olive Oil
  • 6 Garlic Cloves (use fresh garlic for this recipe(
  • ¼ Cup Raisins, Sultanas or Dried Fruit of your choice
  • 1 tsp Salt
  • 1 tsp Pepper

Kitchen Utensils

  • Chopping board
  • Sharp knife
  • Food Processor or Blitzer
  • Frypan

Method

Step 1

Chop up the cauliflower into individual heads and put them in the food processor. You may need to do a few batches depending on the size of your food processor. Don’t overfill the food processor otherwise, the cauliflower might turn to mash instead of rice. I use a Ninja Food Processor and I do a whole cauliflower head in 1 and a half batches.

Step 2

Chop up the garlic in small bits, It doesn’t need to be perfect just small enough so you are not biting into big chunks of garlic.

Step 3

Heat your pan to a medium to high heat with the oil and butter. Add the garlic and cook until the garlic and butter start to turn to a light brown.

Step 4

Add in the cauliflower and cook for 4-5 minutes, keep stirring so all the cauliflower can soak up the garlicky butter. Add in your dried fruit for the last minute and stir through. The sweetness of the fruit balances the strength of the garlic, the richness of the butter, and the nuttiness of the cauliflower. You could use honey or something instead of raisins, but my kids love picking them out, making my job to feed them so much easier.
