Apricot Beef Stew – Easy And Delicious
I was absolutely blown away the first time my husband cooked the family this Apricot Beef Stew recipe. For something that has so few ingredients, it is an amazingly easy and delicious stew that has a sweet and salty sauce. Like most of our recipes, they are super versatile and allow you to add in additional veggies to up the health factor.

So this year I have a goal to stick to three gym sessions a week throughout the winter months. This might not seem like a big goal to some, but for me to juggle full-time work, and my family of four, this will be huge for me!
One thing I have found that makes my healthy routine all that much easier is having healthy food that doesn’t taste like healthy food. I am sure most of us have done the shakes, the rice cakes with tuna, and huge servings of salad and air. The problem with these ‘diets’ is that your cravings end up getting the better of you and the giant binge sessions begin. So this year for me, it has been all about, simplicity, variety and healthy dishes made from unprocessed ingredients. This doesn’t mean giving up on tasty recipes or foods with mouth-watering sauces.

The thing I love about this Apricot Beef Stew recipe is that it is an easy winner for a quick meal prep or healthy dinner. Or why not both! Us parents typically cram 25 hours into a 24 hour day, so having to cook a separate meal prep plus a separate dinner is just a waste of valuable time. I like to cook up a big batch for a dinner dish and have enough to get me 2 to 3 days worth of lunches, or vice versa. Cook up the Apricot Beef for 2 to 3 lunches on a Sunday arvo, but make sure there is enough for the fam for at least one dinner.
How To Make Apricot Beef Stew – Let’s Get Cooking!
The same thing with all our recipes, we normally cook extra so we have enough to get us another dinner, or enough for a couple of lunches. This means we don’t need to cook every day, giving us more time for family, activities, or just kicking back for a Netflix session. I’m sure you would all be happy not to wash dishes every day.
Cooking wise, you can whip up this beef stew dish in roughly 30 minutes which is made up of 5 minutes prep and 25 minutes cooking. Add a bit of extra time if you are cooking bigger quantities for your meal prep (or are feeding a lot of hungry people).

Ingredients
- 2.2 pounds (1kg) Beef Mince or Beef Chunks
- 2 Brown Onions (finely chopped)
- 2 Red Capsicums (chopped into squares or strips)
- 1 Chopped Large Sweet Potato (chopped into small cubes)
- 2 Cups Chopped Dried Apricots (roughly chopped)
- 4 Large Handfuls Baby Spinach (roughly chopped)
- 1 Litre Beef Stock
- 3 Tbsp Olive Oil
Method
Step 1
On medium-high heat the olive oil. While you wait for the pan to heat up, chop up the onion, sweet potato and capsicum. Add them to the pan and cook until they are soft and start to brown.
Step 2
Add all the beef mince to the pan and break up with your spoon as it cooks. The beef will take roughly 5 minutes per kilogram to brown, in this time, roughly chop all your apricots. Add all the beef stock and apricots to the pan when the beef mince is a consistent brown color.
Step 3
Turn the heat down to medium and let it simmer for 20 minutes. For the last 2 minutes, add in the spinach and stir through. Add salt and pepper to your desired taste.
Step 4
Serving time!
