Ever craved an easy crispy chicken dinner, had Colonel Sanders on your mind but then thought… ”probably not the healthiest choice mom”. Yeah, this is pretty much what most Tuesdays look like for most households. Now, what if I told you, you can make a decently healthy crispy chicken recipe that is Mexicany, tasty, and is baked in the oven! Say Whhaaatttt! 

“The Healthy Treat The Ticks All My Junk Food Cravings”

I semi-joked about the Tuesday night ritual before, but let’s be honest, it’s pretty damn accurate lol. Tuesday, the day after Monday, and you’re already hanging for the weekend. For me and my fam, this is the night we need a little oommf for dinner to get us through the pre-mid week blues. This Mexican Crispy Chicken Recipe is the healthy treat that ticks all my junk food cravings and helps me feel human again as I roll into Wednesday. Prep takes less than 5 minutes, it gets slapped in the oven for 25 minutes and it is on the table before you can even think about hitting the KFC drive-through.

I like to cook a bit extra so hubby and I can have it for lunch the following day. Now, I know it looks like many ingredients, but trust me, no work is involved in putting them all in a bag.

Ingredients

  • 2 pounds (900g) Chicken Thigh
  • 1tbs Garlic Powder
  • 1tbs Onion Powder
  • 1tbs Smoked Paprika Powder
  • ½ tbs Dried Oregano
  • ½ tbs Dried Basil
  • ½ tbs Cumin Powder
  • ½ tbs Dried Chilli Flakes (or powder)
  • ½ tbs Pepper
  • 1 tbs Salt
  • ½ cup Breadcrumbs
  • 2 tbs Olive Oil

Kitchen Utensils

  • Chopping board
  • Sharp knife
  • Large Ziploc bag
  • Sheet of baking paper
  • Oven Tray

Method

Step 1

Preheat your oven to 390℉ (200℃) and put it on the grill or fan grill if it has that function… either one is fine.

Step 2 

Cut chicken thigh anyway you want! Strips, cubes, nuggs, it’s up to you! Just keep the pieces max 1 inch thick so they can cook quickly.

Step 3

Put the chopped-up chicken in the large Ziploc bag and add all the dry ingredients (everything except the oil). Seal up the bag and shake it around to coat all the chicken.

Step 4

Line your oven tray with baking paper. Place the coated chicken on the paper and drizzle the olive oil over the top of the chicken. Place the tray on the top shelf of the oven and as soon as you put it in, turn off the grill and switch it over to the normal fan-forced or conventional cooking mode. The additional heat from the grill starts helps the chicken crisp up nicely without burning or drying it out. Let the chicken cook for 20 – 25 minutes (depends slightly on how thick you cut your chicken and the power of your oven).

Step 5

Take it out, dish it up and serve it with whatever side you want!
